Chocolate Covered Peanut Butter Chews

This homemade recipe is a fan favorite in my own home. Easy to whip up for a last-minute gift idea or dessert for a get-together with friends and family. You can experiment with other nut butters of your choice. Cashew and pistachio would be super tasty as well!

Ingredients:

  • 1/2 cup raw peanut butter 

  • 1 Tbsp of coconut oil 

  • 1 Tbsp unsweetened cocoa powder 

  • 6 Dates (pitted) 

  • 1/4 cup raw honey or maple syrup

    PREPARATION INSTRUCTIONS

    1. Add all ingredients into a food processor and blend until evenly blended. May need to wipe down the sides and blend again a few times.

    2. When processed, roll into individual balls and place on a baking sheet covered with parchment paper.

    3. Place in freezer for about 20 minutes or until firm.

    4. Then melt chocolate chips (I used Enjoy Life) with a little coconut oil and roll the balls in the melted chocolate.

    5. Place back on baking sheet and back into freezer until chocolate hardens.

    I like to store them in the freezer. These are super rich and tasty!
